Leave the day at the door
A lovely evening does not need a grand occasion. Sometimes it is enough to agree that, for the next hour, we will not measure time by the notifications on our phones. To settle into our seats, notice the light and ask the person opposite us something we truly want to hear the answer to. It is this shift from the rush of the day to being present that changes the atmosphere at the table.
Begin with curiosity
Choosing wine is not a test. Instead of looking for a name that sounds impressive, say what you enjoy: something fresh, something gentler or a flavour with more depth. Ask about its origin and the people behind the bottle. This way, the wine list becomes the beginning of a story rather than a list from which you must guess the only correct answer.
Give flavour time
Before the first sip, look at the glass and pause over its aroma. You do not have to identify a particular fruit or find an expert description. You can simply say that something reminds you of autumn, fresh fruit or an evening spent somewhere else. Then take a small sip and give yourself a moment to notice the impression it leaves. Your own experience of the flavour is enough of a starting point.
The table is for conversation
Different impressions make good company more interesting. If a wine is someone else’s favourite but does not suit you, there is no need to agree out of politeness. Share what you like and what you might choose next. The most enjoyable conversations about wine leave room for both knowledge and a beginner’s curiosity, without turning into a competition in terminology.
A small ritual, a big difference
Try a simple agreement for your next gathering: phones to one side, water on the table and plenty of time between courses. Choose music that accompanies the conversation and lighting in which everyone feels comfortable. You do not need perfect decoration. What matters is attention to the people around you and the freedom for the evening to find its own rhythm, with wine or an alcohol-free choice.
What stays with us afterwards
At Amfora, this is precisely the feeling we want to nurture: hospitality that shows in small gestures and gatherings we give time to unfold. In the end, we may not remember every detail on the label. But we will remember the conversation that continued longer than planned and the feeling that, that evening, we were truly present.
